Strawberrys contains citric acid, which is the most abundant organic acid in strawberry, followed by ascorbic acid.
The National Library of Medicine conducted different studies to determine the acid levels in strawberries in their different maturity stages.
They concluded that the amount of citric acid in strawberries at the fully ripened stage is (1200–1434 mg/100 g FW).
They claim that citric acid is the dominating acid in strawberries.
The National Library of Medicine also said that ascorbic acid is the second dominant acid in strawberries.
However, the citric acid in strawberries is ten times higher than ascorbic acid in concentration.
The level concentration of ascorbic acid in strawberries is (90–131 mg/100 g FW).
Tartaric acid is 48–55 mg/100 g FW, and malic acid is (0.7–2.6 mg/100 g FW), which was present at much lower concentrations.
